This is a natural process, where ripe coffee cherries with a high percentage of brix (sugar content) are taken to raised beds where they will be in a thin layer receiving the sun. After a week, the cherries will then rest in the shade, to be later transferred to the greenhouse patio to continue drying, in which the cherries are rotated twice a day. This makes for an extremely slow drying process (22-30 days) which build intense flavors.

Brew Recipe

We recommend a 16:1 water to coffee ratio for most home brewers and pour-over methods. Grind your coffee to a medium grind setting, similar to sand.

A True Bargain

I don't indulge in elaborate reviews that go into specific flavors. I think this is reasonably smooth, some bright fruit tartness and is well balanced.

To make this simple: If this were the only coffee I had to drink for the rest of my life, I would be a happy man. And at this price, it is a super bargain.

This is my favorite. Easy drinking…nice flavor. Has the right amount of roasting and flavor for me—not bitter like starbucks. Closer to a dunkin w way more flavor! I tried a 1 lb bag and now we buy the 5 lb bag regularly.

Central/South American tends to be our go to, however the Kayon Mountain is a pleasant departure from bolder (chocolate and plum) flavors. What can be challenging about African blends is they often carry heavy floral notes that can come across as sour. This has a nuanced profile that we have enjoyed as a drip or pour over. It is sweet, but still provides lingering notes (~caramel) that provide a satisfying cup.
