Nine Bars is our signature espresso, roasted and blended to deliver classic espresso taste notes. Our current version blends coffees from El Vergel in Colombia, and Daterra Estate in Brazil. We purposely apply heat more gently and extend the roast on these two coffees, to help dial back the acidity in the cup. The Spring and Summer 2024 version of Nine Bars delivers more sweetness and chocolate notes up front, with the cherry and citrus taking more of a secondary role. This is a versatile espresso, at multiple extractions, very pleasing on its own or when combined with steamed milk. Also, very wonderful as a filtered coffee, iced coffee, or cold brew.
Our Nine Bars blend may change seasonally to utilize the freshest coffees available, but we strive to keep the taste in the cup consistent.
We suggest: 18-19g dose, 40-45g extraction, 25-30 seconds, 202F

I order Nine Bars twice firts order was good second not realy not coffee taste too biter not planing to order any more.
Took me some time to dial in the right grind size for best extraction and peak sweetness, but these beans make a good espresso. It runs more toward the traditional dark roast type of espresso than the so-called "modern" lighter roasts (which is a good thing, IMHO).
I bought this on a whim, because I was passing by and knew of the place. I have a couple of espresso blends from other small roasters that are my regular "go to" beans, but I may add this one to the rotation.
The gentleman who helped me with the sale couldn't have been nicer.
I just wish they were able to let people sit in the shop and buy cups of espresso made from their various roasts. They have a beast of an espresso machine in the retail space that would do a fine job. Not sure what sort of governmental hoops they would have to jump through, but I think they'd do well with it. Plus, for selfish reasons, I would like to sample the beans before buying a whole bag. My consumption rate is pretty slow, so I don't want to be stuck with a month of beans I don't love.
Another solution that would allow more people to try more different coffees would be to offer "sample sizes" of 4 to 6 ounces. This is something that many small roasters do, so how hard could it be?
This is the best coffee there is!

Good bean. I also cut the caffeine cup content by mixing with Decalf Nor’easter 5:2.
For pour over prefer the none bar solo neat…
