This is our second consecutive year purchasing coffees from Yolaxen (yo-la-shen), this year committing to a much larger quantity as the 2018 crop is a standout. This year we selected Lot #1, which was the second pick during harvest, right in the prime spot for the most ripe cherries! Sourced once again with the help of our friends at Onyx Coffee, who do a wonderful job using their network to find the very best offerings of Guatemala.
Yolaxen is four hour drive north of Huehuetenango City, in the mountains of north-central Huehuetenango, lush forests cut at hard angles into rocky ridges, then back into rich green hues. Coffee farms spread vertically over the mountainsides, evergreens towering over the vegetation.
In 1985, Señor Tomas Sebastian bought this farm from Miguel Francisco, who had always used it for coffee production. Over the past 33 years he and his family have strived to implement better quality practices, replanting much of the farm with Caturra and Bourbon plants and rebuilding the wet mill.
Cherries are picked ripe, washed and sorted, fermented 18 to 24 hours, and dried 4 to 6 days on patios. Over the coming years Tomás hopes to better his technical processes to increase quality.
Roast & Taste: Roasted in our lighter craft style, we taste a clean fruit forward, balanced cup.
