Process: Fully washed, sundried on clay patios

The Alvarez family has been growing coffee in El Salvador for over 100 years, and across four generations.  Their award winning farms are located on the lush green hills of Santa Ana, in the west of the country, whose rich volcanic soils and mild climate provide ideal conditions for growing coffee.  

Following family tradition, both farms to this day are planted solely with red bourbon variety trees, demonstrating the family's commitment to quality.  

Clay patios are traditional in this region, and the family prefers them to the more modern concrete patios, as clay is more endothermic, and thus is very good at regulating temperature at allows them to more slowly dry the coffee.  Many will argue, a slower drying process is critical to cup quality.

We Taste: Delicate and sweet, black currant and green apple with bright acidity, clean finish, with mild body.
