Coffee Profile

We explored new sourcing in 2022 for our Sumatra, and we are very pleased with the quality of this lot, from the Aceh Tengah region of Sumatra. We don't take the roast profile too deep on this one, as we want to maintain and accentuate the natural sweetness that is inherent in this coffee.  

This lot is from the Arisarina Cooperative, which was established in 2013 and is located at the highlands of Gayo, Aceh Province of Indonesia, in the town of Takengon. The membership has reached 2000 Gayo coffee farmers, who all contribute coffee cherry from their small farms. 

For a wet hulled coffee, it is exceptionally clean, and has an herbaceous undertone, that is highlighted by honey and vanilla sweetness. Coffees from Sumatra are often wet hulled. In this process, ripe cherries are harvested each day, then are de-pulped and allowed to ferment in buckets for 20-28 hours. After fermentation it is washed and then hulled while the coffee is still wet. Once hulled it is placed out on the patios to dry to 17% moisture.
