For the more adventurous coffee drinker, Honey Mountain is a high altitude honey processed coffee from the Tablón de Gómez municipality in Nariño, Colombia. There is plenty of balanced sweetness in the cup, as blueberry and fruit notes abound, rich cacao as the cup cools , and a very pleasing pomegranate acidity throughout. This coffee does not have some of the "boozy" tropical fruits notes that are common with extended fermentation. The fruit flavors are sweet, balanced, and complex, and have a pleasing aftertaste.
This coffee is processed by several farmers at Tablón de Gómez with a similar process. This consists of a honey process with a fermentation of 48 hours in mucilage, followed by an average of 18 days dried on patios and raised beds.
Please note the term, "honey process" refers to the sticky, honey-like consistency of the mucilage (the layer surrounding the raw coffee bean) during processing. The name is only used to describe the mucilage's texture; there is actually no honey in the coffee.
