Guatemala La Colmenita
Roast Level
We are excited to welcome back one of our favorite coffees, La Colmenita, grown in the high altitudes of Huehuetenango by Francisco Cardona Martin. Delicate fruit sweeetness, black berry acidity, and cooling into milk chocolate this year, this coffee never disappoints. La Colmenita is a high altitude farm, sitting 1850-2000 meters above sea level, in Buena Vista, Huehuetenango in NW Guatemala. This is our fourth year purchasing lots from Francisco and La Colmenita
Driving the narrow mountain road up an impossibly steep slope to Finca La Colmenita, or "The Beehive", the views are striking. The valley stretches out below, and we have visited many farms on this mountainside, guided by our friends from Onyx Coffee that own Finca Vista Hermosa, which sits just below La Colmenita.
When Francisco Cardona Martin bought La Colmenita in 2002, he had a vision: To produce the best quality coffees possible, by planting varieties known for excellence in separation, and investing heavily in equipment and farming techniques. Francisco is incredibly resourceful, drying his coffee on a patio he built on top of his house and investing nearly all profits from coffee sold back into the farm. He often attends cuppings with the Onyx QC team to develop his skills and to learn where he can improve.
